CourseGraphic If you love chili and the adventure of unfamiliar cuisine, this class will be a delight. You may be familiar with New Mexico’s official state vegetable or you may be an uninitiated cook waiting to light the fires of chili passion. In the Land of Enchantment, chili is more than an ingredient: it is the embodiment of a diverse and rich cultural heritage and a distinct Southwestern lifestyle. Explore chili’s unique culinary contributions and learn how to handle them safely. You will help prepare flour tortillas, green and red chili sauces, enjoy carne adovada and green chili stew, and debate the New Mexico state question: red or green?
