CourseGraphic Tamales are a traditional Mesoamerican dish consisting of a masa (maize) dough, savory or sweet fillings, and steamed in a corn husk or banana leaf. In Latino cultures, tamales are a family tradition during Christmas, prepared in large batches and involving several family members in the preparation. We will host a tamalada (tamale-making party) and learn how to prepare masa dough and fillings (savory and sweet), folding techniques, cooking and storing. Each participant will leave with their own parcel of portable goodness. This is a hands-on class.
