CourseGraphic Tamales, a traditional Mesoamerican dish of a masa (maize) dough and savory or sweet fillings steamed in a cornhusk or banana leaf, are a family Christmas tradition in Latino cultures. Families prepare large batches and prepare the tamales together. We will host a tamalada (tamale-making party) and learn how to prepare masa dough and fillings (savory and sweet), folding techniques, cooking, and storing. Each participant will leave with a parcel of portable goodness. This is a hands-on class.
